Garlic Jelly

Garlic jelly is sweet but has a delicious garlicky taste.

  • cut tops off of garlic bulbs
  • drizzle oil and pepper, wrap in foil and bake at 425 degrees F for 15-20 Min
  • squeeze out garlic into blender and add 1/2 cup of balsamic vinegar
  • blend until small chunks of garlic are to your liking
  • Add garlic mixture to large stove pot and add in the rest of the vinegar
  • add sugar and bring to a boil
  • be sure to stir often, so sugar doesn't burn
  • once sugar is dissolved, add in pectic and bring to rolling boil for 1 min
  • take off heat and ladle into clean canning jars
  • process in hot water bath canner for 10 min

serve with crackers or on a cheese board
